Ingredients
- For the Salad
1 cup diced red cabbage
1 cup canned corn kernels, drained
1 cup cooked pasta (fusilli or rotini)
1/2 cup diced red onion
1 cup chopped lettuce (Romaine or Iceberg)
1 cup diced tomatoes
1 cup diced cucumbers
1/2 cup sliced green onions
- For the Dressing
3/4 cup mayonnaise
1/4 cup sour cream or Greek yogurt
2 tablespoons olive oil
1 tablespoon white wine vinegar
1 tablespoon fresh dill, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon fresh chives, chopped
1/2 teaspoon dried oregano
Salt and freshly ground black pepper to taste
1 teaspoon honey (optional)
2 -3 tablespoons milk, to thin the dressing to desired consistency
Optional garnishes: fresh herbs (like parsley or dill), shredded cheese, or diced bell peppers
Instructions
- In a medium bowl, whisk together the mayonnaise and sour cream (or Greek yogurt) until well blended.
- Add the olive oil and white wine vinegar, whisking until the mixture is smooth and creamy.
- Stir in the fresh dill, parsley, chives, and dried oregano. Mix until all the herbs are evenly distributed.
- Season with salt, freshly ground black pepper, and honey (if using). Taste and adjust the seasoning as needed.
